VINIFICATION
Harvest: September 22-29, 2021, selective hand-picking, large boxes
Processing: the destemmed berries are returned to the box without squeezing
Fermentation: open fermentation on the mash
Mashing time: 3 weeks
Rest period: after drawing off the mash, stored in old barrels for 6 months without the addition of sulfur
